Tomato Soup
When is cold and rainy, this is my favorite soup
Ingredients
- 1 cup coconut milk
- 1 cup vegetable broth
- 1000 grams cherry tomatoes
- 1 cup basil
- 2 heads garlic cloves
- 2 white onions
- 1 tbsp ground thyme or fresh
- 1 tsp Chili flakes
- 1 tsp salt and pepper
Instructions
- 1. Preheat your oven to 400F.2. Using an oven-safe container, add all ingredients except coconut milk and veggie broth. 3. Bake for 40-50 min.4. When the veggies are ready, add the coconut milk and veggie broth. 5. Use an immersion blender until it becomes a soup consistency.
Notes
You can eat this soup with tofu or a grilled cheese sandwich.
