Tomato Soup

When is cold and rainy, this is my favorite soup

Ingredients

  • 1 cup coconut milk
  • 1 cup vegetable broth
  • 1000 grams cherry tomatoes
  • 1 cup basil
  • 2 heads garlic cloves
  • 2 white onions
  • 1 tbsp ground thyme or fresh
  • 1 tsp Chili flakes
  • 1 tsp salt and pepper

Instructions

  • 1. Preheat your oven to 400F.
    2. Using an oven-safe container, add all ingredients except coconut milk and veggie broth.
    3. Bake for 40-50 min.
    4. When the veggies are ready, add the coconut milk and veggie broth.
    5. Use an immersion blender until it becomes a soup consistency.

Notes

You can eat this soup with tofu or a grilled cheese sandwich.
