Cheesy spaghetti

I made this recipe with literally nothing but those ingredients inside my fridge, but honestly, it turned out really yummy. Give it a try, and let me know what you think.

Cheesy Spaghetti

This spaghetti is creamy, delicious and simple to make

Ingredients

  • 2 red bell pepper
  • 6 garlic cloves
  • 1/2 white or purple onion
  • 1/2 cup soaked cashews
  • 3/4 veggie broth
  • 1/2 cup tomato sauce
  • 1 tsp salt
  • 1/2 cup nutritional yeast
  • 1 tsp black pepper

Instructions

  • 1. Cut bell peppers and onion into pieces.
    2. Using a baking tray, add garlic, onion, and bell pepper. Bake at 350F for 20 minutes.
    3. Meanwhile, cook spaghetti according to package instructions.
    4. When ready, add all the ingredients to a blender and blend until smooth.
    5. Pour the sauce into the spaghetti, mix well and cook for about 5 minutes; add arugula or spinach.

Notes

For this recipe, I used beans as protein, and I added arugula plus feta vegan cheese.
