Cheesy Spaghetti
This spaghetti is creamy, delicious and simple to make
Ingredients
- 2 red bell pepper
- 6 garlic cloves
- 1/2 white or purple onion
- 1/2 cup soaked cashews
- 3/4 veggie broth
- 1/2 cup tomato sauce
- 1 tsp salt
- 1/2 cup nutritional yeast
- 1 tsp black pepper
Instructions
- 1. Cut bell peppers and onion into pieces. 2. Using a baking tray, add garlic, onion, and bell pepper. Bake at 350F for 20 minutes.3. Meanwhile, cook spaghetti according to package instructions.4. When ready, add all the ingredients to a blender and blend until smooth.5. Pour the sauce into the spaghetti, mix well and cook for about 5 minutes; add arugula or spinach.
Notes
For this recipe, I used beans as protein, and I added arugula plus feta vegan cheese.
