Gluten-free Pumpkin spice pancakes

My favorite thing to do when it rains is to eat and watch movies. Pumpkin season is here and in my opinion, this is the perfect combo.

These pancakes are thin and perfect for fall

Ingredients

  • 1/2 cup oat flour
  • 1/2 cup almond flour
  • 1 tbsp pumpkin puree
  • 1 tsp pumpkin spice
  • 1 tsp baking powder
  • 1 tbsp coconut sugar

Instructions

  • Mix wet ingredients in a bowl. We then combined all your wet elements. Mix well, then cook with a little bit of vegan butter for 4-5 min each side until golden brown.
    For the toppings
    chopped Pecans
    1/2 banana
    melted dark chocolate blueberries
