Blueberry muffin

INGREDIENTS

2 tbsp ground flaxseeds 

6 tbsp water

3 ripe bananas 

1/2 cup unsweetened applesauce

1/2 cup unsweetened plant milk 

1/2 cup peanut butter

1/4 cup maple syrup 

1 tsp vanilla extract 

1 tsp cinnamon 

3 cups oats 

1 apple 

1/3 cup chocolate chips

LET THE FUN BEGIN

Preheat oven to 350 f and lightly grease the muffin pan.
To a large bowl, mix the ground flaxseed with water and let it sit for 3-5 minutes to gel.
Add the banana to a bowl and mash until pureed, then add the applesauce, plant milk, peanut butter, maple syrup, vanilla, and cinnamon. Mix until well combined.
Then add the oats and stir until well combined.
Lastly, chop the apples into small cubes and mix them with all the batter. Add chocolate, and optional, you can top your muffins with some berries of your choice. I used blueberries and raspberries. Bake for 25 min until lightly golden.
Let cool for 5 minutes and enjoy!
