Healthy Veggie protein skewers

Shopping list 

1 pack of tofu 

1 green pepper

1 sweet potato

1 red bell pepper 

16 oz baby Bella mushroom

14 wooden skewers

Marinade
2tbsp lemon
2tbsp olive oil
1tbsp nutritional yeast
1/4tsp dried basil
1/4 tsp dried thyme
1/4 tsp salt
1/4 ground black pepper
1/4 dried oregano

Preheat oven @350f.
Cut tofu into small pieces Sprinkles pinch some salt and pepper.

Mix your marinade ingredients in a small bowl. Put it on the side.

Cut your veggies into medium pieces.
Once’s veggies are ready. Start assembling your skewers.
Place them in a baking tray and brush with some marinade.
Bake for 20-30min.

Enjoy with your favorite dressing or vegan tzatziki ❤️
