Casserole taco

INGREDIENTS 

Marinade

2 cloves garlic 

2 tbsp chilo powder

2 tsp paprika

2 chipotle peppers in adobo 

1/4 apple cider 

1 tsp avocado oil (optional)

1 yellow onion

“Taco meat”

10 oz shiitake mushrooms

1 crunchy taco shells from site or any brand of your preference

1 avocado 

1 lime 

1/2 cup beans

LET THE FUN BEGIN 

In a bowl, add all the marinade ingredients mix until well combined.
Preheat your oven at @350F.
Chop mushrooms and onions in small slices.
I am using an oven-safe casserole. Add chop mushrooms and onions, followed by the marinade mix. Cook for about 10 minutes.
When ready, take the casserole to the oven and bake for about 10 minutes.
Assemble your taco skillet/ casserole by adding all your favorite toppings. I used lettuce, beans from my previous recipe, avocado, and cashew cream, which you can also find in my recipes.
