Blueberry almond muffins

INGREDIENTS

1/4 cup coconut oil 

1 cup unsweetened plant based milk 

1 tbsp apple cider vinegar

2 tbsp maple syrup or 4 if you like your muffins on the sweet side

1tsp vanilla

pinch of salt

2 1/2 cup almond meal 

3/4 cup gluten free rolled oats 

1/4 tsp baking soda

1 cup fresh blueberries 

 

LET THE FUN BEGIN 

Combine all your dry ingredients in a bowl, followed by your wet ingredients. Except for your blueberries, you can mix them at the end to avoid smashing them.
Bake for 25-30 minutes @350F.
