Mung bean omelette

INGREDIENTS 

1/2 cup mung bean flour

1/2 cup coconut milk or plant milk of your choice

1 tsp avocado oil 

1 tsp black salt 

1/4 turmeric powder

1/4 garlic powder 

1/4 pink salt 

1/4 onion powder 

1 cup micro greens 

 

LET THE FUN BEGIN 

In a bowl, combine all the ingredients except the microgreens and mix it until well combined if your mixture is thick, add a little more plant-based milk.
Preheat a skillet using a little bit of oil of your choice. When warm, add 1/4 cup of your mixture, cook for about 4 minutes, flip it to the other side, and cook for another 5 minutes.
