How to make vegan egg salad

If you don’t have a stove, microwave or time, don’t worry. I got you.
This recipe is super quick to make, and the best part is that you can include it on your meal prep list.

Shopping list 🛒📝

* 1 block of tofu extra firm tofu
* ½ cup vegan mayonnaise
* 3Tbsp nutritional yeast flakes
2 Tbsp chopped fresh chives
* 1 tsp Dijon mustard
* ½ tsp curry powder
* ¼ tsp ground turmeric
* 1/2 tsp kala namak
* ¼ tsp ground black pepper
* 3 romaine lettuce leaves
* ½ cucumber, sliced
* 2 pickle slices (optional)
* 2 slices gluten-free bread 🍞

Let the fun begin
Drain tofu, then chop it into small pieces.
Add it to a bowl and add the remaining ingredients except for the bread, cucumbers, pickles, and lettuce.
Mix everything until well combined.
Assemble the sandwich and enjoy it!
